Eggplant rolls with minced meat

Eggplant rolls with minced meat baked in the oven with tomato sauce.

Ingredients

Directions

  1. Prepare products.
  2. For minced meat, I twisted the pork pulp in a meat grinder along with onions.
  3. Finely chop one onion and garlic.
  4. Cut the tomatoes in half.
  5. Grate the tomato halves so that the skin + remains in the hands, discard it.
  6. Fry the onion in a pan until golden brown, season with salt and pepper. Add the garlic to the onion and fry for about 1 minute, until the characteristic garlic aroma appears.
  7. Add grated tomatoes, stir, bring to a boil.
  8. Finely chopped parsley, basil and thyme can also be sent there (instead of fresh herbs, you can use dry herbs to taste). Pour in sugar, mix.
  9. Cook the tomato sauce over medium heat for about 15-20 minutes. Some of the moisture in the sauce will evaporate and it will thicken.
  10. Wash the eggplant, cut into 5 mm thick slices.
  11. Lay the eggplant on a baking sheet lined with parchment. Salt and brush with vegetable oil. (If you're not sure about the quality of the parchment, brush it with vegetable oil to keep the eggplant from sticking to the paper.)
  12. Put a baking sheet with eggplants in an oven heated to 190 degrees for 15 minutes - bake the eggplants until soft (the baking time depends on the size of the eggplant and the thickness of the cut).
  13. Salt, pepper the minced meat, you can add spices to taste. If you have minced meat ready, add finely chopped onion to it for juiciness.
  14. Put a small amount of minced meat on eggplant slices.
  15. Roll the eggplant with minced meat into rolls, lightly pressing the eggplant rolls with your hands so that they do not turn around.
  16. Pour some sauce into a baking dish. Put eggplant rolls with minced meat on the sauce.
  17. Top with sauce and put the eggplant rolls in the oven for 30 minutes. Bake eggplant with minced meat in the oven at a temperature of 190 degrees.
  18. Grate cheese.
  19. Remove the pan from the oven, sprinkle the rolls with cheese and return to the oven for 2-3 minutes to melt the cheese.
  20. Baked eggplant rolls with minced meat are ready. Serve hot.
