Eggplant with minced meat, Chinese style

  1. Cut the eggplant into slices, 0.2 cm thick.
  2. Transfer the eggplant to a bowl and sprinkle liberally with sea salt. Leave the eggplants in salt for 20 minutes so that bitterness comes out of them. Then rinse the eggplants under running water from salt and dry them with kitchen paper towels.
  3. Mix all mince ingredients in a bowl. We beat the minced meat well, raising the ball of minced meat above the bowl and throwing the minced meat with force again into the bowl - this way we get a homogeneous minced meat without air.
  4. (IMPORTANT: If your soy sauce is not salty enough, add salt to your minced meat to taste.)
  5. Now stuff the eggplant. Put a ball of minced meat on the center of one eggplant circle and press the minced meat with the second eggplant circle.
  6. In a bowl, beat an egg with water with a fork. Put the flour in a separate bowl. Dip the eggplant first in the egg and then in the flour.
  7. In a frying pan, heat the vegetable oil and fry the eggplant with minced meat over medium heat for 5 minutes on each side.
  8. Put the cooked eggplants with minced meat on a paper towel to absorb excess oil.
  9. Eggplant with minced meat, ready in Chinese! A simple and tasty dish that can be served both as a hot appetizer and as a meat dish.
  10. Any sauces are suitable for eggplant with minced meat, but it is best to serve them with soy sauce.
