Eggplant with minced meat (in the oven)

  1. Wash the eggplant, cut off the stem and cut in half.
  2. Place the eggplants in a deep bowl, salt (1 teaspoon) and leave for 40 minutes. During this time, the eggplant will release juice and all the bitterness will go away.
  3. Finely chop the onion.
  4. Fry the onion in vegetable oil until golden brown.
  5. While the onion is frying, finely chop the garlic.
  6. Add garlic to onion.
  7. Add minced meat there, stir and fry for 10 minutes. Add salt and pepper to taste.
  8. Place eggplant on a baking sheet lined with foil.
  9. Distribute minced meat on top.
  10. Cut the tomatoes into circles. Decorate eggplant with minced tomatoes and drizzle with vegetable oil.
  11. Pour in some water. Send eggplant with minced meat and tomatoes to the oven, heated to 180 degrees, for 30-40 minutes.
  12. Remove the eggplant from the oven after 30 minutes.
  13. Sprinkle with grated cheese and send the eggplant with minced meat to the oven for another 10 minutes.
  14. Oven baked eggplant with minced meat, tomatoes and cheese is ready.
  15. Eggplants are served hot, but they are also very tasty when served cold.
