Eggplants with nut paste, in cheese batter

Recipe for tender, juicy and fragrant eggplant stuffed with nut paste, fried in cheese batter. Stuffed eggplants in batter will surely surprise your loved ones at a family dinner.

  1. Wash the eggplant and cut into 2 cm thick slices.
  2. We cut each circle in the middle, without cutting it to the end (a slice of eggplant should open like a “book”).
  3. Pour water into the container, add 2 tsp. salt and add eggplant. Leave aside for 10 minutes to let the bitterness go.
  4. Cooking nut butter. Coarsely chop the green onion. We clean the garlic.
  5. Put green onions, garlic, parsley and nuts in a blender bowl.
  6. Whisk the ingredients. Nut paste should not be very homogeneous, there should be nut crumbs.
  7. Transfer the pasta to a separate container. Add 2 tsp. lemon juice, 1 tsp. salt and 2 tbsp. l. vegetable oil.
  8. Three hard cheese on a fine grater.
  9. Mix eggs and sour cream.
  10. Mix/beat thoroughly.
  11. Add ½ tsp to beaten eggs and sour cream. black pepper and the same amount of salt.
  12. Add 1 tbsp. l. flour and grated cheese. Mix thoroughly. Cheese batter for eggplant is ready.
  13. After 10 minutes, drain the water from the eggplants and dry them with a towel.
  14. We stuff eggplants. We take a circle of eggplant and open it. Inside we put 1-1.5 tsp. nut paste. We press the two halves. If the filling has gone beyond the edges of the circle, just remove it.
  15. In a separate container, pour 5 tbsp. l. flour and coat eggplant first in flour on both sides.
  16. Then dip the eggplants in cheese batter on both sides.
  17. Pour 4 tbsp into the pan. l. vegetable oil and lay out the stuffed eggplants, leaving a distance of 2-3 cm between them so that they do not stick together.
  18. Fry eggplant in cheese batter for 5 minutes on each side.
  19. We cover the baking sheet with parchment paper and shift the fried eggplants.
  20. Cook eggplant stuffed with nut paste in the oven at 160 degrees for 10 minutes. Thus, incompletely fried eggplant mugs will reach full readiness. We cut off a layer of protruding batter around the eggplant to give a beautiful shape to the circles.
