Falafel from chickpeas

Falafel - deep-fried chickpea balls - a Middle Eastern dish very popular in Israel, almost a national symbol of this country.

Ingredients

Directions

  1. Pour chickpeas with cold water 3 cm above its level and leave for a day. Then throw the chickpeas into a colander.
  2. Roast the sesame seeds in a dry frying pan and grind with oil using a pestle.
  3. Place all falafel ingredients in a food processor and process until smooth.
  4. Form dense balls from the resulting mass (I got 12 pieces) and fry the falafel in deep fat until golden brown. It is better to fry the falafel in several passes so that the balls do not stick together.
  5. Remove the fried balls from the oil and place on paper towels to absorb excess oil.
  6. Combine yogurt, salt and chopped garlic clove.
  7. Serve chickpea falafel with garlic sauce and fresh vegetables.
  8. Bon appetit!
