Fish rolls with tomatoes and cheese baked in foil

Fish Fillet Rolls Stuffed with Tomato and Cheese is an easy-to-prepare, low-volume dish that can be served as an appetizer or for dinner. Fish rolls are baked in foil without a drop of oil or breading, which allows you to reduce the calorie content of the dish, while maintaining the juiciness of the fish.

  1. Prepare the ingredients according to the list.
  2. For cooking, you can use both fresh and frozen fish fillets. Defrost frozen fillets before cooking.
  3. You can take any tomatoes, I used cherry tomatoes.
  4. Place the fish fillet on a cutting board, cover with cling film and gently beat with the flat side of a culinary mallet (no spikes).
  5. Cut the cheese into thin slices.
  6. Cut the tomatoes in half, remove the seeds with a teaspoon.
  7. Cut the remaining dense part of the pulp of tomatoes into large pieces.
  8. Save a few tomato slices for garnish if you like.
  9. Turn on the oven and preheat to 200 degrees.
  10. Lay about half of the fish fillets (2-3 layers, depending on size) overlapping each other. Sprinkle with salt, ground black pepper and fish seasoning to taste. You can take any seasoning, but it’s good if it contains turmeric (as in this case) - it will give the roll an appetizing golden hue.
  11. Spread about half of the cheese and chopped tomatoes over the fish.
  12. Roll the fish fillet with cheese and tomatoes into a tight roll.
  13. Lay the roll on a piece of foil (in this case - 28x32 cm) and, if desired, sprinkle with a pinch of seasoning for fish.
  14. Wrap the fish roll tightly in foil and twist the loose ends.
  15. Repeat the process with the remaining fish fillet and filling.
  16. Place foil-wrapped fish rolls with tomatoes and cheese on a baking sheet, place in preheated oven and bake for 25 minutes.
  17. Then, if desired, unfold the foil and place the rolls in the oven for another 4-5 minutes for light browning.
  18. Remove rolls from oven and cool 5 minutes before serving.
  19. (Alternatively, foil rolls can also be cooked in a skillet - fry for 15 minutes over medium heat, turning every few minutes for even browning.)
  20. Remove the foil from the finished fish rolls.
  21. Garnish the serving plate with lettuce and tomato slices, if desired. Cut the rolls into portions, put on a plate and serve.
