Fried chicken liver with garlic-soy sauce

  1. Prepare all ingredients.
  2. Liver buy fresh, chilled. Frozen liver will turn out tough and not so juicy.
  3. Rinse the chicken liver well under running cold water. Examine each piece of liver for the presence of a gallbladder. It must be carefully cut so that the liver does not turn out bitter.
  4. Pat the liver dry with a paper towel to remove excess moisture.
  5. Salt to taste and season with ground black pepper. Stir.
  6. Pour flour into a bowl. Roll each piece of liver in turn on all sides.
  7. Heat vegetable oil in a deep skillet over moderate heat. Dip the liver in hot oil. Cover and cook over moderate heat for about 7 minutes until the underside of the liver is lightly browned.
  8. Carefully flip the liver over to the other side. Continue frying for another 5 minutes. During this time, the liver will cook and remain tender.
  9. For the sauce, peel the garlic and grate it on a fine grater. Pour in the sugar.
  10. Pour soy sauce over garlic and sugar.
  11. Table vinegar dilute 1 tbsp. a spoonful of cold boiled water. Thanks to this step, we will reduce the concentration of vinegar, and it will not be so harsh. Pour the vinegar into the sauce.
  12. Stir until the sugar grains dissolve.
  13. Put the fried liver on a plate.
  14. Pour over the prepared sauce. Sprinkle with chopped parsley. Fried chicken liver with garlic-soy sauce is ready.
  15. Serve with any side dish, fresh bread or vegetable salad.
