Fried eggplant in soy sauce with garlic

A simple recipe for a spicy eggplant appetizer. It combines ease of preparation, cheap ingredients and excellent taste. Fried eggplants are poured with soy sauce with garlic, paprika and chili peppers and warmed up to maximize the flavors and aromas. These eggplants are soft, spicy and moderately salty.

  1. Rinse the eggplant, cut off the stems. Cut the eggplant in half, and cut each half into triangular bars (a quarter of a circle).
  2. Send eggplant to a bowl, add starch and paprika. Toss the vegetables until they are coated on all sides.
  3. Heat vegetable oil in a frying pan (2-3 tablespoons), put eggplants in one layer and fry them for 2-3 minutes on each side, until golden brown.
  4. In the process of frying, you can cover the pan with a lid - so the vegetables will cook faster and absorb less oil.
  5. Put all the fried eggplants out of the pan on a plate covered with a paper towel or napkin so that excess vegetable oil is absorbed into it. Roast the next batch in the same way.
  6. Peel the garlic, grate it on a fine grater and combine in a bowl with hot red pepper, paprika and soy sauce.
  7. Transfer the fried eggplant to a dry, clean skillet and pour in the sauce. Heat over medium heat for 3-4 minutes until the soy sauce has evaporated.
  8. Finely chop the parsley and add to the pan. Stir gently and turn off the heat.
  9. Place fried eggplants in soy sauce with garlic on a plate, sprinkle with sesame seeds on top and serve. The dish is very tasty both hot and cold.
  10. Such spicy eggplants are a great appetizer for any feast. The spiciness of the dish can be adjusted by adding hot red pepper and garlic, and the eggplants themselves can be baked instead of frying - it will be less nutritious, but no less tasty!
