Fried eggs in bread, with minced meat and cheese (in the oven)

An interesting weekend breakfast - delicious scrambled eggs in bread, with hearty stuffing of minced meat and cheese. Such a beautiful, nutritious and very tasty hot sandwich cooked in the oven will provide energy for a long time!

  1. We prepare the necessary products.
  2. Instead of minced chicken, you can use pork, beef or any other to your taste.
  3. Slices of loaf can be replaced with slices of toast bread.
  4. Butter is better to get out of the refrigerator in advance.
  5. Fried eggs in bread are cooked quite quickly, so it is better to immediately turn on the oven to warm up to a temperature of 180 degrees.
  6. We clean the onion and rub it on a coarse grater or finely chop with a knife, or chop in a blender.
  7. Heat vegetable oil in a frying pan. We send the minced meat to the pan and add the chopped onion. Stirring occasionally, fry the minced meat with onions over medium heat for about 10 minutes, until tender. Then add soy sauce, ground pepper and dried herbs (I have a mixture of Provence herbs). We leave to chill.
  8. We divide the cheese into two parts. We rub one half on a grater, and cut the other into thin slices.
  9. Grease half of the bread (3 slices) with a thin layer of butter on one side.
  10. From the 3 remaining bread slices, cut out the middle, stepping back from the crusts by about 1 centimeter so that you get "frames" of bread.
  11. We cover the baking sheet with parchment. Grease slices of bread with butter with ketchup. Lay cheese slices on top and place on a baking sheet. On top of each sandwich with butter, ketchup and cheese, carefully place a "frame" of bread. Each sandwich will have a "window" through which ketchup and cheese will be visible.
  12. In the "window" of each sandwich we put the fried minced meat.
  13. Gently break an egg into each "window" (directly on the minced meat), trying to keep the yolks intact. Salt.
  14. We send it to the oven, preheated to 180 degrees, for about 10 minutes. Then carefully remove the baking sheet and sprinkle with grated cheese so that it does not fall on the yolks. Put it back in the oven for about 5-6 minutes. During this time, the yolks remained liquid.
  15. We wash the parsley, dry it and finely chop with a knife.
  16. Sprinkle the finished scrambled eggs in bread with chopped parsley and serve.
