But let's add one secret ingredient to the kefir batter - soy sauce, which will positively affect both the taste itself and the color of the batter in particular and the whole dish as a whole.   1. Prepare the necessary ingredients.
  2. It is best to choose young zucchini - it is much more tender and does not contain hard seeds.
  3. Pour kefir into a bowl and heat it slightly in the microwave (1-2 minutes at maximum power). Then add soda and stir. Soda will react with kefir, and the mass will begin to foam.
  4. Beat in the egg, pour in the soy sauce, add sugar and salt.
  5. Mix thoroughly with a whisk.
  6. Now add flour.
  7. Stir. You will get a homogeneous dough, the consistency of which resembles condensed milk.
  8. Wash the zucchini, cut off the edges. Cut the zucchini into thin slices.
  9. Heat vegetable oil in a skillet over medium heat. Dip some of the chopped zucchini in the batter.
  10. And immediately put them in a pan with heated vegetable oil.
  11. Fry the zucchini in a batter over medium-low heat for about 2-3 minutes on each side, until golden brown.
  12. Transfer the fried zucchini from the pan to a paper towel to absorb excess oil. Meanwhile, fry the next batch.
  13. Zucchini fried in soy-kefir batter is ready.
  14. Serve batter-fried zucchini to the table warm or cooled, with sour cream and garlic or other sauce.
