Hot appetizer of eggplant and tomatoes with cheese

Today we are preparing a traditional Mediterranean hot eggplant appetizer combined with tomatoes and cheese.

  1. Wash the eggplant, cut into rings about 1 cm thick and sprinkle with salt. Leave them to lie down so that bitterness comes out of them. When you see droplets on the eggplant, this is the bitterness that you wash off under running water.
  2. Pour vegetable oil into a frying pan and heat. Then send eggplants in it to fry. Season them with salt and fry on both sides until golden.
  3. Put the fried eggplants on a dish and continue to form an appetizer. Pick up the plate in which you plan to serve the appetizer on the table so that it (the appetizer) is not shifted in finished form.
  4. If you are preparing an appetizer for the evening, season the eggplants with garlic squeezed through a press.
  5. Grate the cheese and put it on the fried eggplant slices.
  6. Wash the tomatoes, dry and cut into circles, which put on eggplant slices. Choose tomatoes of the same diameter as eggplants so that the appetizer looks beautiful.
  7. Salt the tomatoes a little and sprinkle with cheese. Send the eggplant and tomato appetizer in the microwave for 1-2 minutes so that the cheese is just melted. If you do not have such an electrical appliance, use an oven.
  8. You can serve a hot eggplant and tomato appetizer immediately after cooking. However, it is also delicious chilled.
