Lavash pie with vegetables and mushrooms

A very unusual and tasty lazy lavash pie, the sheets of which are layered with vegetables, mushrooms and cheese. Baking in the oven makes the cake soft and juicy.

  1. Cheese grate on a fine grater.
  2. Cut the eggplant lengthwise into slices. Cut the tomato into circles.
  3. Finely chop the greens.
  4. Cut the onion into quarter rings and fry until lightly browned.
  5. Fry eggplant until golden brown.
  6. Saute mushrooms until tender. Salt.
  7. Fry the tomatoes too.
  8. Cut a sheet of pita bread into identical rectangles corresponding to your baking dish or baking sheet.
  9. We collect the future pie. At the bottom of the form we put a sheet of pita bread, fried eggplant plates, fried onions and greens.
  10. Cover with a second sheet of pita bread. Now - a layer of tomatoes, onions and herbs.
  11. Cover with a third sheet of pita bread. We spread the fried mushrooms, chopped garlic, cheese.
  12. Again pita bread, eggplant, onion, herbs, cheese.
  13. We cover with the last sheet of pita bread and send the pita cake to the oven for 15-20 minutes. The filling in the pie is ready, you just need to warm up the pita bread with vegetables, mushrooms and cheese until the cheese melts.
  14. Do not keep the pita cake in the oven for a long time, otherwise it will become dry and brittle! If this happens, sprinkle the cake with a little water and cover with a towel for 10 minutes.
  15. Let the finished lavash pie with vegetables and mushrooms cool down a bit and serve. The cake can be left in the pan or inverted onto a plate.
