In a large skillet over medium heat, heat 2 tablespoons of butter, add the onion to the skillet and fry, stirring, until soft. Transfer the fried onions to a small ovenproof dish. Sprinkle with salt and pepper and top with sliced eggs.
Turn on the oven with the grill function to preheat to a high temperature.
In the meantime, melt 55g butter in a small saucepan over low heat. Gradually add flour to butter, stirring constantly. Continuing to stir the flour, add milk to the saucepan, stir until smooth. Bring sauce to a boil, reduce heat to low, and simmer, stirring, until thickened. Add mustard, cheese and cayenne pepper (if using) to saucepan, stir well.
Pour the sauce over the onion. Put the dish under the grill and bake for 2-3 minutes.
Serve the dish immediately.
