Lemon Muffins

In my opinion, a very successful recipe. The muffins are noticeably lemon in taste, with a soft center and firm top.

Ingredients

• juice and zest of 1 lemon
• 1 egg
• 100 ml sour cream (yogurt and kefir are also fine)
• 70 g butter, melt and cool
• 150 g flour
• 50 g almond flour or ground almonds
• 100 g sugar
• 1 tsp baking powder
• ½ tsp soda

Directions

1. Preheat oven to 200 degrees.
2. First, mix dry ingredients in one bowl. Then wet in another bowl. And then quickly combine and mix them together, especially without zeal.
3. Place the paper cupcake tins in the slots of the iron cupcake pan (so they do not blur out of the paper) and fill the tins with dough to the very edges. Bake until tender, check with a match (20-25 minutes).
