Mackerel rolls with bell peppers, carrots and cheese

Baked mackerel is always delicious and beautiful. I propose to give the fish dish a bright taste and a festive look by preparing mackerel rolls.

Ingredients

  1. We prepare the necessary products.
  2. I have a ready-made mackerel fillet, which significantly reduces the cooking process. You can take a whole carcass of fish and cut it into fillets.
  3. You will also need wooden skewers (I have 8 pcs.) To fasten the rolls.
  4. Peel the carrots, wash and rub on a coarse grater.
  5. Peel the onion, wash and cut into small cubes.
  6. We wash the bell pepper, remove the seeds and stalk and cut into medium-sized pieces.
  7. Peel the garlic and cut into small pieces.
  8. Heat the vegetable oil in a frying pan and fry the garlic for about a minute, until the aroma appears. Remove the roasted garlic. We won't need it.
  9. Put onions and carrots in garlic oil and fry for 5-7 minutes, until half cooked.
  10. Add chopped peppers to the pan and fry for a couple more minutes. Then take the pan off the heat.
  11. Dill washed, shaken and finely chopped.
  12. Roasted vegetables removed from the heat, salt (0.25 tsp) and pepper (on the tip of a knife). Add chopped dill to them and mix everything thoroughly.
  13. Turn on the oven to heat up to 180 degrees.
  14. Cut the cheese into slices (I have 2 pieces and a quarter for 1 fillet). You can also grate the cheese.
  15. Salt the mackerel fillet (0.5 tsp) and pepper (0.25 tsp).
  16. On each fillet we lay out slices of cheese (or grated cheese) along the entire length.
  17. We divide the vegetable filling into 4 equal parts (according to the number of fillets).
  18. Place 1/4 of the vegetable filling on top of the cheese on the wide edge of the fillet.
  19. We turn the fillet into a roll and fasten the edges with wooden skewers.
  20. In the same way, we form rolls from the remaining mackerel fillet and vegetable filling.
  21. Line a baking sheet or baking dish with foil.
  22. We spread the prepared rolls on a baking sheet and place in an oven preheated to 180 degrees. Bake for 30 minutes (depending on your oven).
  23. After the time has passed, we take out the fish rolls and remove the wooden skewers.
  24. Mackerel rolls with bell peppers, carrots and cheese are ready!
  25. Sprinkle the rolls with chopped herbs, such as green onions, and serve hot or cold.
  26. Mackerel rolls look beautiful on the table.
