Meatloaf with scrambled eggs and mushrooms can be served hot as a main dish, as well as cold as an appetizer or on sandwiches.

  1. Peel the onion and cut into cubes. Wash mushrooms, dry with paper towels and cut into slices.
  2. Fry mushrooms with onions in a heated pan with vegetable oil. Salt and pepper.
  3. Grate cheese.
  4. Cool the fried mushrooms with onions and mix with grated cheese.
  5. Add the egg, finely chopped parsley, salt and black pepper to the minced meat. You can use spices according to your taste.
  6. Mix minced meat, add breadcrumbs.
  7. Thoroughly knead the minced meat and beat it several times in a bowl. Cover the bowl with cling film or a lid and let the mince stand for about 20 minutes.
  8. Prepare an omelet. Break two eggs into a bowl, season with salt and pepper, pour in milk and beat.
  9. Gradually add flour and stir until smooth.
  10. Heat a little oil in a frying pan, pour in the omelet mixture and fry the omelette on both sides.
  11. Place the hot omelette on a cutting board. Spread the mushroom filling over the surface of the omelet.
  12. Roll up the omelette with mushrooms. It is important to fold the omelet while hot so that it does not crack.
