Mushrooms baked with vegetables and cheese

Ordinary champignons can be very interesting to beat and make an original dish. Today I will share with you such a recipe - champignons baked with vegetables and cheese. For stuffing mushrooms, we use zucchini, sweet peppers, hard cheese and tomatoes. Add a piquant note with garlic and Italian herbs.

  1. It is better not to wash mushrooms with running water so that they are not saturated with excess moisture (just gently wipe them with slightly dampened kitchen towels).
  2. Free all mushrooms from the legs (they will be needed a little later). You can immediately prepare a baking dish and put all the mushroom caps in it "bottom" down.
  3. Cut mushroom stems into as small pieces as possible.
  4. Heat up a frying pan and add some vegetable oil. Put the chopped mushrooms into the pan and fry for several minutes, stirring, until the liquid evaporates.
  5. Turn on the oven to preheat to 180 degrees.
  6. Peel the sweet peppers and remove the partitions. Cut the pepper into small cubes.
  7. Cut the zucchini into small cubes as well.
  8. Remove the stalk from the tomato. Cut the tomato into small cubes.
  9. Grate hard cheese on the smallest grater.
  10. Peel and mince the garlic.
  11. In a deep bowl, combine cheese, tomato, sweet pepper, zucchini and fried mushrooms. Add salt and ground black pepper, Italian herbs and minced garlic.
  12. Mix all combined ingredients.
  13. Fill the champignon caps quite generously - with a slide so that there is a lot of filling. During the baking process, the mushrooms will settle a little, and it is important that the filling does not fail and it does not turn out small.
  14. Bake mushrooms in an oven preheated to 180 degrees for 25-30 minutes.
  15. Transfer the cooked mushrooms to a dish and serve. Garnish with fresh herbs if desired.
  16. The appetizer is delicious both hot and cold.
  17. Enjoy your meal!
