Open pie with cheese and herbs

Shortcrust pastry pie stuffed with cheese, eggs and a lot of greens can be both an addition to the first course, and a completely independent breakfast, afternoon snack or dinner. The healthy fresh herbs in this pie add a summery touch, lightness and vibrant color to the dish.

  1. Prepare the dough: sift flour into a deep bowl, add salt and grate cold butter on a grater.
  2. Mix butter with flour. You can grind them in a bowl with the back of a spoon or use a food processor.
  3. Add 2-3 tbsp. spoons of cold drinking water.
  4. Using your hands, quickly knead the soft shortbread dough, collecting all the ingredients into a uniform lump. Wrap the dough in cling film and refrigerate for 30 minutes.
  5. Turn on the oven so that it heats up to 200 degrees.
  6. Prepare the filling: grate the cheese on a coarse grater into a deep bowl.
  7. Add salt, pepper mixture, eggs and milk to the cheese.
  8. Chop parsley and onion with a knife. Leave a few green leaves to decorate the pie.
  9. Add the chopped greens to the bowl with the pie filling. Stir.
  10. Transfer the chilled dough to a flat surface.
  11. Roll out the dough with a rolling pin into a circle 0.5 cm thick and 23-24 cm in diameter.
  12. Line a 19-20 cm diameter baking dish with dough so that the bottom is closed and sides 2 cm high are formed.
  13. Pour the filling into the mold over the dough.
  14. Bake a shortbread pie with cheese and herbs in an oven preheated to 200 degrees for 25-30 minutes.
  15. Transfer the cake from the mold to a plate, decorate with fresh herbs.
  16. Despite the fact that the filling was liquid, the finished cake can be cut immediately after baking, the filling rests on the dough.
  17. Juicy delicious filling and soft slightly salty dough - a great combination!
