Pancakes are one of our favorite foods. We offer you a recipe for pancakes with potatoes, with mushroom sauce.

  1. Pour the potatoes with cold water, cover with a lid and bring to a boil. Add one teaspoon of salt and cook over low heat until tender.
  2. In a mixing bowl put 2 eggs, half a teaspoon of salt, half a teaspoon of sugar, add 300 milliliters (of cooked 650 milliliters) of milk, mix.
  3. Mix 280 grams of flour with 1 teaspoon of baking powder, add to a bowl. Mix at low speed until a homogeneous dough is obtained.
  4. Gradually add another 150 milliliters of milk. In the process of mixing, remove the sticky dough from the walls of the mixer. Leave the dough for 20 minutes for flour to swell.
  5. While the dough is resting, cut 200 grams of onion into small cubes and fry until golden brown in 30 grams of vegetable oil.
  6. We return to the test. Whisking at low speed, add the rest of the milk. We filter the finished dough for pancakes through a sieve. We set aside.
  7. We take out the boiled potatoes from the water, knead in mashed potatoes.
  8. Add fried onions, 40 grams of butter, salt, pepper to taste and mix well. Potato filling for pancakes is ready.
  9. Let's start baking pancakes. From this amount of dough you will get 16 pancakes with a diameter of 25 centimeters. Brown the pancakes on one side and, if desired, grease with melted butter.
  10. On the browned side of each pancake, put a tablespoon of the filling.
  11. We bend the sides of the pancake to the middle, about two centimeters on each side, and turn it into a sausage.
  12. Cooking mushroom sauce. Finely chop 400 grams of fresh mushrooms, put in a saucepan.
  13. Cut 50 grams of shallots or onions into small cubes and add to the mushrooms.
  14. Pour 250 milliliters of water into the pan, put on fire, cover with a lid, bring to a boil and cook the mushrooms over low heat until tender, about 25 minutes.
  15. In the finished mushrooms, without removing from the heat, add 30 grams of flour, mix thoroughly.
  16. Add 1 teaspoon salt and half teaspoon pepper. Add 125 grams of sour cream to the sauce, mix.
  17. Add 1 tablespoon of chopped dill, mix again. Turn off the flame, cover with a lid and set aside. Keep the mushroom sauce hot.
  18. Fry ready-made pancakes with potatoes on both sides until golden crispy.
  19. We serve pancakes with potatoes to the table with hot mushroom sauce.
