Peppers baked with scallops

Such an exquisite dish is prepared only for the closest and dearest people, or for those who need to impress.

Ingredients

  1. Turn on the oven to preheat to 180 degrees. Cut each pepper in half and remove the seeds (leave the stalk). Rinse the halves under running water and pat dry with paper towels.
  2. Grease an ovenproof dish with olive oil and place the pepper halves on it, cut side up. Put garlic slices inside the halves, sprinkle with salt and black pepper. Drizzle peppers with olive oil and place in preheated oven for 40 minutes.
  3. Cut each scallop in half to make two circles. Remove the fried peppers from the oven and put one circle of scallop in each half, put 1 teaspoon of pesto sauce on top.
  4. Put the baking sheet back in the oven and bake the peppers for another 10 minutes. Sprinkle roasted peppers with chopped parmesan.
  5. Serve warm with lettuce and basil.
