Pork roasted in foil with mushrooms is the perfect dish for a holiday. The meat is pre-marinated with onions, mustard and mineral sparkling water, due to which it turns out very juicy. The dish is prepared simply and easily. You can pre-form foil bags with meat and mushrooms and put them in the oven for the arrival of guests.   1. Prepare all ingredients.
  2. It is best to use the shoulder or neck part of pork.
  3. Remove the pickled mushrooms from the marinade.
  4. Peel the onion and cut into small cubes.
  5. Cut the meat into cubes about 3x3 cm.
  6. Put the meat and onions in a deep bowl with a lid. Add mustard, pepper and half the salt. With your hands, mix the meat with the onion well so that the onion releases the juice.
  7. Pour in 100-150 ml of mineral sparkling water and mix. Leave the meat to marinate for 2-3 hours (you can overnight).
  8. After a while, turn on the oven to heat up to 180 degrees.
  9. Wipe fresh champignons with a damp kitchen towel, freshen the cuts on the legs. Slice fresh mushrooms into thin slices.
  10. Heat a frying pan with vegetable oil and put fresh mushrooms there.
  11. Fry the mushrooms, stirring, 6-7 minutes, until golden brown.
  12. From a roll of foil, cut 6 squares with a side of 25 cm.
  13. Place one sheet of foil in a deep bowl, forming a recess-pocket.
  14. Put 4-5 pieces of marinated pork with onions in a foil pocket.
  15. Place a few whole pickled mushrooms and 4-5 plates of fried mushrooms on top of the meat.
  16. Connect the edges of the foil at the top, forming a kind of bag with meat and mushrooms inside.
  17. Proceed in this way with all prepared products.
  18. Put the resulting bags in a mold or baking sheet.
  19. Send the pork with mushrooms in foil to the oven preheated to 180 degrees for 40 minutes. Then carefully unfold the foil and bake for another 15-20 minutes to slightly evaporate the juice and brown the dish a little.
  20. Serve pork baked with fried and marinated mushrooms directly in foil, garnished with fresh parsley if desired.
  21. Meat in foil bags retains its heat for a very long time, so it can be cooked slightly in advance, which is very convenient when planning a feast.
