An interesting recipe for potato croquettes with ham! Small cubes of ham are added to potato croquettes. Thanks to the ham, the croquettes are very satisfying, with a bright meaty tinge. Deep-fried, croquettes acquire a delicious crispy crust. An excellent appetizer, simple to prepare, but very tasty and original.

  1. We clean the potatoes and pour water in a saucepan so that it covers all the tubers. Add salt.
  2. Bring the water to a boil and cook the potatoes for 25-30 minutes, until soft.
  3. Drain the water from the cooked potatoes and leave to cool slightly. The potatoes must be warm.
  4. Cut the ham into very small cubes.
  5. Grate warm potatoes on a medium or fine grater.
  6. Separate the eggs into yolks and whites. Add 1 egg yolk and ham to potatoes.
  7. We also add 50 g of flour to the potatoes and, if necessary, salt to taste. We mix.
  8. With hands moistened in water, we form small balls the size of a quail egg from the potato and ham mass. It turns out 26-27 balls.
  9. Whisk the remaining egg whites until stiff peaks form.
  10. We prepare 3 bowls: the first - with beaten egg whites, the second - with breadcrumbs, the third - with the remaining flour (50 g).
  11. Dip each ball first in flour.
  12. Then dip into protein.
  13. Then roll in breadcrumbs.
  14. Put the prepared croquettes on the board.
  15. Heat vegetable oil in a shallow saucepan or saucepan. The oil should not be too hot so that the croquettes have time to fry inside. Dip the croquettes into the oil.
  16. Deep-fry the croquettes over medium heat for about 3 minutes, until browned. Then take out the croquettes with a slotted spoon.
  17. Transfer the finished croquettes to a paper towel or paper towel to soak up excess oil.
  18. Transfer the potato croquettes with ham to a plate and serve.
  19. It is very good to complement potato croquettes with ketchup or sauce.
