  6. In a bowl, combine boiled pumpkin, chopped onions and carrots. Add salt.
  7. We mix everything well.
  8. We rub the cheese on a large grater.
  9. Turn on the oven to heat up to 180 degrees.
  10. We divide the mass of the pumpkin into 5 equal parts. From each part we form a cake. It is most convenient to form a cake in the palm of your hand.
  11. Cheese is also divided into 5 parts. Put a piece of cheese in the middle of the pumpkin tortilla.
  12. We wrap the cheese in a cake and form a spherical croquette. So we form croquettes from the remaining pumpkin mass and cheese - in total we get 5 pieces.
  13. In a bowl, combine breadcrumbs and dried parsley.
  14. We mix.
  15. Roll the croquettes in the mixture.
  16. We cover the form or baking sheet with parchment. Grease the parchment with vegetable oil and lay out the croquettes.
  17. Bake pumpkin croquettes in an oven preheated to 180 degrees for about 25 minutes.
