Rice croquettes are often pan fried or deep fried. According to this recipe, rice croquettes with cheese are baked in the oven, which makes them not too greasy and very appetizing, with a golden crispy crust.   1. We prepare the necessary products. Rice for croquettes is well suited round, when boiled it is more viscous and the croquettes hold their shape well.
  2. We wash the rice, put it in a saucepan and pour 400 ml of water, add some salt.
  3. Bring the rice to a boil and cook over low heat for 15-20 minutes, until cooked and completely absorbed. Let the cooked rice cool down.
  4. Grate hard cheese on a medium grater and add to the cooled rice. If salt is not enough, add salt to taste.
  5. Also add 1 egg to the rice.
  6. Mix until smooth.
  7. Cut the mozzarella into small cubes.
  8. With moistened hands, form a cake from the rice mass.
  9. Put a piece of mozzarella in the middle of the tortilla.
  10. We wrap the edges of the cake and form a ball.
  11. So we form all rice croquettes. I got 11 pieces.
  12. Turn on the oven to heat up to 200 degrees.
  13. Lightly beat the second egg.
  14. Dip each rice ball in the egg.
  15. Then roll in breadcrumbs.
  16. We cover the baking sheet with parchment and lay out the croquettes.
  17. Bake rice croquettes in an oven preheated to 200 degrees for 20-25 minutes.
  18. Rice croquettes with cheese are ready.
