Sandwiches with champignons and cheese

Sandwiches with mushroom filling are so tasty that they are eaten with lightning speed! Juicy and fragrant filling for sandwiches is made from champignons fried with onions, fresh herbs and cheese. Almost a win-win!

Ingredients

  1. Peel the onion and cut into small cubes. In a skillet, heat 1 tbsp. a spoonful of vegetable oil and put the chopped onion. Stirring, fry the onion over medium heat for about 3-4 minutes, until translucent and a light golden hue.
  2. Wash the mushrooms. Trim away any dark areas and freshen the cut on the stalk of each mushroom. Cut prepared mushrooms into thin slices. I have fairly large mushrooms, so I first cut each mushroom in half.
  3. Add chopped mushrooms, salt, thyme, black pepper to the pan with onions. Stirring, fry over a high enough heat so that the mushrooms are lightly browned, and the released juice has evaporated.
  4. Rinse the parsley, dry it, remove the stems, and finely chop the leaves.
  5. Grate the cheese on a coarse grater.
  6. Add grated cheese and chopped parsley to skillet.
  7. Stir the contents of the pan and remove it from the heat.
  8. Take another clean, dry frying pan, grease or sprinkle it with a small amount of vegetable oil and put on heat. Fry the bread slices over medium heat for about 1-2 minutes on each side, until lightly browned. Put the toast on a plate and cool slightly.
  9. Spread the mushroom filling in an even layer on four of the eight slices of bread.
  10. Place a second slice of bread on top of the mushroom filling, forming sandwiches. Press lightly on top of each sandwich with the palm of your hand.
  11. Sprinkle the pan where the bread was fried again with vegetable oil and put on heat. Grill the sandwiches over medium heat for about 2-3 minutes on each side, until golden brown.
  12. Serve sandwiches immediately after cooking, hot or warm.
