Sandwiches with eggplant

  3. Cut the bread into bite-sized pieces.

  5. We fry the bread in the same oil in which we fried the eggplant.
  6. Since the further cooking process will take place in the microwave, I put the eggplant bread on a microwave stand.
  7. We rub the cheese on a medium grater and add a clove of garlic passed through a press into it. Mix well with cheese and garlic.
  8. We spread the cheese mass on top of the eggplant. We send the sandwiches to the microwave for about 40 seconds to melt the cheese.
  9. Decorate ready-made eggplant and cheese sandwiches with cherry tomatoes, fresh parsley and serve.
