  1. Before cooking sausages in tomato sauce, prepare the necessary ingredients.
  2. Dried chili flakes can be substituted for ground red pepper, chili pepper, or cayenne pepper, given their varying degrees of spiciness.
  3. Instead of ready-made peeled and chopped tomatoes, you can use whole canned tomatoes in their own juice: peel them and chop them lightly with a knife.
  4. Peel and finely chop the onion and garlic cloves.
  5. Heat vegetable oil in a skillet over medium heat. Saute the onion, stirring occasionally, until soft and translucent, about 6 minutes.
  6. Then add chopped garlic, ground paprika and sugar to the pan, as well as a little salt and hot pepper to taste. Stir-fry for 1 minute to let the garlic and spices release their flavors.
  7. Add chopped canned tomatoes and all the juice from the jar to the pan. Stir and cook the tomatoes over medium heat for 3-4 minutes, so that some of the liquid has evaporated and the sauce has slightly thickened.
  8. Then pour in the water. The amount of water for the sauce can be adjusted to your liking: from 250 to 375 ml (1-1.5 cups). I prefer thick tomato sauce so I add 250 ml of water.
  9. Stir the sauce well again, bring to a boil and cook for another 15 minutes. The fire should be slightly below medium so that the sauce constantly simmers gently.
  10. While the tomato sauce is being prepared, you can simultaneously prepare a side dish for sausages in sauce: make mashed potatoes, boil rice, buckwheat or pasta.
  11. Peel the sausages from the shell and make 5-7 deep cuts across each sausage. You can cut sausages into circles or small slices.
  12. After 15 minutes of cooking, taste the tomato sauce and add a little more salt or sugar if necessary. Add ground black pepper if desired.
  13. Place the sausages in the simmering tomato sauce and cook for 5-7 minutes over low heat. During cooking, sausages in a pan need to be turned 1-2 times so that they are better saturated with sauce.
  14. Finely chop two sprigs of parsley and add to the prepared sauce with sausages (also optional).
  15. Garnish the finished dish with whole parsley leaves. Serve hot sausages in tomato sauce with boiled pasta or other side dish.
