Snack cake with meatballs, mashed potatoes and mushrooms

Hot snack cake! An original idea on how to combine your favorite products on the festive table.

Ingredients

  1. All products on the table, you can proceed.
  2. Only mashed potatoes (regular) were prepared in advance. To do this, 700 g of potatoes were peeled, poured with water and boiled for 25 minutes. The water was drained from the cooked potatoes. 50 g of butter, salt and a little hot milk were added to the still hot potatoes and mashed with a potato masher.
  3. Rub the peeled onion on a coarse grater and add to the minced meat.
  4. Here we add crackers, seasoning for meat (preferably with coriander to give the meat a barbecue taste) and salt to taste. Mix and let stand for a few minutes.
  5. Then we form small rectangular cutlets, similar to kebabs.
  6. To make it more convenient to form cutlets, grease your hands with oil (you can’t use water, as oil will splash when frying cutlets).
  7. Fry the cutlets in a small amount of oil over high heat until appetizing crust, not until ready. The main thing is to seal all the juices in the cutlets.
  8. Cut the peeled onion into quarter rings. Mushrooms cut into large slices.
  9. In parallel, in a second frying pan, heat the vegetable oil, put the onion there and bring it to golden brown. Then add mushrooms.
  10. Saute mushrooms quickly to remove excess moisture. At the end, add salt to taste.
  11. We heat the oven to 200 degrees.
  12. On a heat-resistant plate, lay out a detachable form without a bottom (I have a diameter of 18 cm). If there is no plate, then you can put pita bread down.
  13. Spread a thin layer of mashed potatoes on a plate. We expose cutlets along the sides of the form - it turns out a meat "fence".
  14. Put the remaining mashed potatoes in the center and distribute.
  15. Spread the fried mushrooms with onions on top and level. We leave a few plates of mushrooms for decoration.
  16. Ready to fill. We rub the cheese on a fine grater. Finely chop the dill greens, leaving a couple of sprigs to decorate the finished dish.
  17. Beat the eggs lightly with a pinch of salt (focus on the saltiness of the cheese). Add cheese, sour cream and herbs. We mix.
  18. We spread the cheese filling in a mold on top of the mushrooms and level it. We bake a snack cake of cutlets, mashed potatoes and fried mushrooms in the oven for 30-40 minutes, the temperature is 180-200 degrees (it all depends on your oven).
  19. Lightly decorate the finished snack cake on top: mayonnaise, the remaining fried mushrooms, finely chopped dill and quarters of cherry tomatoes.
