We bake delicious snack "muffins" without dough with a base of minced chicken, with a juicy tomato filling, filled with beaten eggs with milk. These "cupcakes" are not at all difficult to prepare for a picnic, a buffet or a hearty snack during the day.

  1. We prepare the necessary products.
  2. You can use paper cupcake liners to make muffins.
  3. Turn on the oven to heat up to 180 degrees.
  4. Wash the fillets and pat dry. We clean the onion. Cut chicken and onion into medium sized pieces.
  5. Grind chicken meat and onions in a meat grinder.
  6. Add sour cream, salt and ground pepper to minced meat. We mix.
  7. Wash the tomatoes, remove the base of the stalk and cut into small cubes.
  8. Wash parsley and chop.
  9. Break the egg into a small bowl and mix with milk. Salt, pepper and stir the omelette mixture with a fork or whisk until smooth.
  10. We insert paper molds into the cupcake mold (optional) or simply grease with vegetable oil.
  11. We spread the minced meat in the cells of the form a little more than half the height. With a teaspoon, we press a recess in the minced meat and evenly fill it with chopped tomatoes and parsley. Pour in 2-3 teaspoons of the omelet mixture.
  12. We send the form to the oven preheated to 180 degrees. Bake the dish for 25-30 minutes.
  13. Ready-made snack "muffins" of chicken fillet with tomatoes and scrambled eggs can be served on a tray or on lettuce leaves.
