I propose to cook balls of spinach with carrots, cheese and nuts, baked in the oven. An excellent appetizer for every day and for the festive table. All ingredients are in perfect harmony and complement each other. Spinach and carrots, combined with nutritious walnuts, salty hard cheese and savory garlic, provide a multi-faceted snack.

  1. Prepare all ingredients.
  2. You can use fresh spinach. I used frozen. Remove it from the freezer in advance and leave it in the kitchen to completely thaw. Adjust the amount of garlic and spices to your liking.
  3. Heat up a dry skillet. Lay out the walnuts. Fry over low heat for 4-5 minutes, stirring with a spatula.
  4. Cool the nuts and grind in a blender or cut into small pieces with a knife.
  5. Turn on the oven and preheat to 180 degrees.
  6. Peel onions, carrots and garlic.
  7. Grate carrots on a fine grater. Cut the onion and garlic into small cubes.
  8. Squeeze the defrosted spinach from the juice.
  9. Blend lightly with an immersion blender.
  10. Add spinach, carrots, onions and garlic to a bowl. Stir.
  11. Grate hard cheese on a medium grater (can be cut into small cubes).
  12. Add egg and grated cheese to all ingredients. Stir.
  13. Add breadcrumbs and chopped nuts. Season to taste with salt and ground black pepper. Stir. Spinach mass lends itself well to molding.
  14. Line a baking sheet or baking sheet with parchment paper. Form small balls from the spinach mass and place in a baking dish. I got 15 balls weighing 35 g each. Send the form with balls to the oven preheated to 180 degrees for 20 minutes.
  15. Spinach balls with carrots, cheese and walnuts, ready. You can serve them on their own or with any sauce. Spinach balls are delicious both warm and cold.
