Bright and appetizing stuffed eggplants can be quickly cooked in the microwave. Tender eggplant pulp is combined with mayonnaise with pieces of hard cheese and tomato. Stuffed eggplants are rich, juicy thanks to the tomato, with a pleasant creamy taste. In addition, the dish does not lose its taste even when cold.

  1. Take the groceries from the list.
  2. Wash vegetables.
  3. Divide the eggplant in half lengthwise. With a knife, make cross-shaped notches (just do not cut through). Spray the cut with vegetable oil.
  4. Place the eggplant halves, cut side up, on a non-metal plate and microwave. Cook for 3 minutes at 750W.
  5. Then scrape out the steamed eggplant flesh with a teaspoon. Transfer it to a bowl.
  6. Finely chop the hard cheese and garlic and add to the bowl with the eggplant.
  7. Remove the stalk from the tomato. Cut the tomato into small pieces and send to the rest of the ingredients.
  8. Add mayonnaise, salt and ground black pepper, mix everything.
  9. Stuff the eggplants with the resulting mixture.
  10. Send to the microwave and cook at a power of 750 W for another 3-4 minutes.
  11. Stuffed eggplant cooked in the microwave, garnish with herbs and serve.
