The recipe for a delicious vegetable snack is a pita roll with potatoes, zucchini, cabbage and sweet peppers. Vegetables are baked in the oven with tomato sauce and become incredibly tender - an excellent filling for pita bread. This vegetarian version of shawarma with seasonal vegetable stew is a great dish for a budget menu!

  1. Cut the peeled carrots into small sticks.
  2. Cut the peeled onion into small cubes.
  3. Chop cabbage into thin strips.
  4. Peel the garlic and cut into slices.
  5. Turn on the oven to warm up to 180 degrees.
  6. Peeled bell pepper cut into strips.
  7. Cut off the ends of the zucchini. Cut the zucchini into small cubes.
  8. Cut the peeled potatoes into small cubes.
  9. Heat vegetable oil in a frying pan and put chopped onions, carrots, zucchini, peppers and potatoes there. Stirring, fry for about 8-10 minutes, until the vegetables are soft.
  10. Transfer the fried vegetables to a baking dish. Pour in the tomato sauce, add salt and pepper. Mix. Send to the oven, preheated to a temperature of 180 degrees, for about 30-40 minutes.
  11. Remove the cooked stew from the oven and cool slightly.
  12. You can leave the oven on for now.
  13. Put half of the cooled stew on the edge of the pita bread.
  14. Roll up the pita bread so that the filling is tightly hidden inside. Do the same with the second pita bread.
  15. Transfer the pita rolls to the oven, on the wire rack, and bake for about 7-8 minutes on each side. You can also simply fry pita bread in a dry frying pan for about 3-4 minutes on each side (medium fire).
  16. Lavash roll with vegetable filling is ready. You can cut it into pieces and serve.
  17. It turns out a tasty and satisfying snack, and with a cup of aromatic tea it will be even tastier.
