In a small bowl, mix all the ingredients for the dressing, set aside.
In another large bowl, combine cheese, lemongrass, garlic, ginger, lime leaves (optional), shallots, chile cilantro, toss to combine. Add flour and salt, mix well. Cover bowl with minced cheese and refrigerate for 1 hour.
Take the cheese mixture out of the fridge and shape it into balls the size of a walnut (you can sprinkle your hands with flour).
Heat vegetable oil in a large frying pan. Fry the tofu patties in hot oil until golden brown, about 4-6 minutes per side. Transfer the fried patties to a paper towel to drain the fat.
Serve the tofu cheese patties with the sauce immediately.
