Tofu fried in breadcrumbs

Tofu cheese is breaded and then grilled with tomato sauce and mozzarella.

Ingredients

  1. Place the grate in the oven at a distance of 5 centimeters from the heating device, and turn on the oven itself with the "grill" function for preheating.
  2. Wrap the tofu cheese in paper towel and pat dry for 10 minutes.
  3. In a medium saucepan over medium-high heat, heat 1 tablespoon vegetable oil. Add garlic to skillet; cook, stirring, for about 30 seconds. Add the tomatoes and juices to the saucepan and cook until slightly thickened, about 7 minutes. Lightly mash the tomatoes with a potato masher. Add the basil leaves to the pan with the tomato puree, salt and pepper to taste. Remove the saucepan from the stove, cover and set aside.
  4. In one bowl, pour the eggs, and in another, mix the breadcrumbs with Parmesan and 1/2 teaspoon of ground black pepper. Sprinkle tofu on all sides with salt.
  5. In a large skillet over medium heat, heat 1/4 cup vegetable oil until smoky. Dip two pieces of tofu in the eggs, then roll in the breadcrumbs, place in a hot skillet and fry until golden brown, about 2-3 minutes per side. Transfer the fried tofu to a plate. Drain the remaining oil from the pan, wipe the bottom with a paper towel. Pour 1/4 cup oil into a frying pan and fry the remaining 2 slices of tofu in the batter.
  6. Place the fried tofu on the grill, top with the tomato sauce and sprinkle with the mozzarella. Place a rack in the preheated oven and roast for about 2 minutes, until the cheese is melted.
