The word zoodles sounds kind of cute and is a neologism for zucchini and noodles (in English noodles). But anyone who now thinks of conventional pasta with zucchini flavor is wrong.

With Zoodles, the healthy vegetables are used directly as a substitute for dough and processed into long spaghetti with the help of a spiral cutter. The new-fangled pasta comes in very handy for the long-lasting trend toward low-carbohydrate nutrition, because Zoodles hardly contain any carbohydrates. 100 grams of zucchini bring it to just 2.2 grams. And the calorie balance of zucchini is also convincing: 19 kcal per 100 grams. The fat content is also less than one percent. Small amounts, make it possible that you don’t have to pay attention to the amount with Zoodles but can stuff your stomach to your heart’s content.

The pasta is ideal for people with gluten intolerance, as it is completely gluten-free. While conventional pasta can also contain egg, zoodles are made from 100 percent zucchini and are therefore ideal for vegans.

How Zoodles are made

Making zoodles really isn’t difficult. All you need is a spiral cutter. With this, you can make zoodles from normal zucchini in no time at all. If you use a cylindrical cutter, make sure that the courgettes are not too large in diameter. It is better to use smaller specimens, these fit into the spiral cutter without any problems. With vegetable cutters, in which the vegetables are clamped, the size of the zucchini does not matter.

Zucchini can also be turned into pasta with a conventional potato peeler. First-quarter the courgettes lengthways and then use the peeler to cut the quarters into wide strips. The zoodles are more reminiscent of wide ribbon noodles than spaghetti.

Those in a hurry and raw foodists can eat zoodles raw and just drizzle them with sauce. If you like the noodles a little softer, you can either soak them briefly in hot water or boil them in salted water for a minute. Drain zoodles well after cooking or soaking.

Zoodles: what about it?

You can eat any sauce with zoodles that you would eat with regular pasta. From all arrabbiata to mushroom sauce, Bolognese, or homemade pesto, everything is allowed. But beware! If you rely on particularly greasy sauces and lots of cheese, you can quickly recoup the saved calories from the pasta.

We have put together four super delicious and creative sauces for zoodles for you here.

Turmeric Latte is the latest craze. The sun-yellow hot drink, also known as golden milk, is said to wake you up, strengthen your immune system and curb your appetite – all thanks to the power of the turmeric root.

While turmeric has been used as a natural remedy in the tradition of Ayurveda for centuries, the yellow spice was previously known in European latitudes as the main ingredient in curry powder. With the invention of the turmeric latte, the sun-yellow powder could now also start its triumphal march at the coffee bar, because turmeric is considered an all-around healthy, sustainable pick-me-up. The hot drink with turmeric and ginger has long been known as “golden milk” to yogis.

According to a study by the University of Michigan, the plant substance curcumin, which is responsible for the intensive color of the spice, strengthens the cell membranes and thus increases their resistance to diseases. In addition, turmeric is said to relieve stomach problems and promote blood circulation – these properties have not yet been scientifically proven.

In Ayurveda, turmeric is one of the “hot spices”. It is credited with having an internally cleansing, healing, detoxifying, and blood-purifying effect. The complexion is also said to improve with the yellow spice.

Turmeric Latte: Is The Drink Really Healthy?

On paper, the positive effects of an afternoon turmeric latte sound excellent – but can the drink also keep up with coffee in terms of taste and stimulating effect?

To find out, we in the EAT SMARTER editorial team brewed our own turmeric latte.

The basic recipe for a turmeric latte

Take a cup of milk, a teaspoon of turmeric powder, half a teaspoon of grated ginger, a pinch of pepper, and a teaspoon of honey, heat all the ingredients in a saucepan, and let them steep for ten minutes.

We topped the sun-yellow milk mixture with some milk froth for a café latte-like look. The turmeric latte can also be prepared vegan: Soy or almond milk is a good milk substitute here. If you like it more exotic, you can also use coconut milk. Instead of honey, the vegan turmeric latte is sweetened with agave syrup.

The taste test: how does turmeric latte taste?

While turmeric stands out in savory dishes for its color rather than its aroma, the spice is clearly the driving force behind the turmeric latte. The drink tastes sweet and spicy at first, then the tart, slightly bitter turmeric aroma comes along – not unpleasant, but takes a little getting used to. Milk and ginger go surprisingly well together.

Our conclusion: Unusual, but good! Even the appetite for sweets was limited after a cup of turmeric latte. With a nutritional value of 120 kcal per cup, a honey-sweetened turmeric latte is a great alternative for the morning or afternoon. Its sunny yellow color also helps to cheer up the mood on cloudy days.

Grandma’s mason jar is celebrating its renaissance as a container for “Mason Jar Salad”. The salad from the jar not only looks good but is also good as a healthy and wholesome lunchtime meal. We’ve rounded up the best Mason Jar combos for you.

“Today I’ll eat a nice fresh salad for lunch” – how often do we start the new working week with this resolution? A new trend from the USA upgrades the salad prepared at home to a small work of art: you are sure to get envious looks when you pull your salad, layered in many bright colors, out of your bag or backpack in a screw-top jar.

The use of a high screw-top jar not only has aesthetic but also practical advantages: All components can be transported together in one container without the green salad becoming limp; because the dressing stays at the bottom of the glass.

How to make your own Mason Jar Salad

The secret to making a salad in a jar that’s pretty and crunchy is layering it right: First, add the dressing to the jar. Then follow all the components that are cut a little coarser, for example, pasta, tofu, potatoes, or chicken. Next, layer chopped nuts, chia seeds, berries, or seeds in the jar. Finally, embed lettuce and sprouts. Screw the lid on tightly and the healthy, homemade lunch is ready!

The highlight of this layering: Now open the glass and put the contents on a plate or in a bowl, the green salad forms the basis and the dressing can be easily spread over all the ingredients.

Three great Mason Jar Salad combos

1. The Hearty: Spinach and Bacon Salad

The building blocks

Halve and thinly slice the onions. Roughly dice the mushrooms. Sort the baby spinach, wash thoroughly and spin dry. Prepare the mayonnaise according to the recipe and first pour it into the screw-top jar, then add the eggs and onions. This is followed by the mushrooms, the bacon, and the baby spinach.

2. The Trendy: Kale and Chickpea Salad

Juice bars in New York and Los Angeles have long included them in their range. We’re not talking about green smoothies – which are almost a thing of the past again – but about activated charcoal. This is supposed to be particularly healthy. We reveal what is behind the new trend.

The renowned TIME Magazine called activated charcoal the latest in-ingredient for health-conscious people. And actress Gwyneth Paltrow even called a lemonade with activated charcoal the “best juice cleanser ever”. So what exactly is behind the activated carbon trend?

Due to their black color, drinks with activated charcoal are reminiscent of the school paint boxes of the past and look very difficult to get used to. Because apart from coffee and cola, there have not been any pitch-black drinks on the market so far. But with activated charcoal, this is about to change. There are also drinks with a gray color. These are different types of nut milk to which activated charcoal is added. Visually, however, they are more reminiscent of building cement.

How does activated charcoal work?

The effect of activated charcoal, unlike its appearance, sounds promising: it is said to detoxify and help against unpleasant body odors. Even with a hangover or nasty jet lag, charcoal drinks should be able to contribute to faster regeneration.

The activated carbon for the drinks is heated with steam. As a result of this process, part of the carbon is gasified and what remains is negatively charged charcoal, which is intended to absorb positively charged toxins (poisons). Gases and acids should also be bound with the help of activated carbon and thus prevented from being absorbed by the cells.

However, activated carbon can also bind valuable nutrients. The maximum amount of 1-3 grams per day must therefore not be exceeded.

How do the charcoal drinks taste?

Activated charcoal is tasteless. Adding almond milk, another nut milk, or some kind of lemonade gives the drinks a flavor that isn’t all that bad. Only the consistency takes getting used to. Because there are many small carbon particles in the drinks, which can be felt in the mouth when drinking.

Where are the activated charcoal drinks available?

Don’t worry, you don’t have to fly all the way to the US to try the charcoal drinks. They are now also offered by German green smoothie and juice suppliers. However, these are not cheap. Three activated charcoal lemonades and 3 activated charcoal nut milk cost around 55 euros in a set.

A few years ago, the latte macchiato was the coffee drink of the moment. Then he faced competition from filter coffee, the preparation of which was celebrated in all its facets. And now? Let’s drink cold coffee. But not as ice coffee, but as cold brew coffee.

What is Cold Brew Coffee?

While with iced coffee the coffee is first boiled in a conventional way and cooled before consumption, cold brew coffee differs in its production. As the name suggests, the caffeinated drink is made with cold rather than hot water. Leave the coffee in the water for at least 12 hours. This type of preparation means that cold brew coffee has less acidity and bitterness than conventional coffee. It is therefore also suitable for people with a sensitive stomach.

It is lighter in color than espresso or filter coffee and has a brownish tint. Due to the gentle way it is prepared, the cold brew coffee is full of flavors ranging from berries to chocolate to roasted nuts. Connoisseurs also taste chocolate or citrus aromas.

In the US, cold brew coffee has been pretty hot for a while. There you can buy the trendy drink in stylish brown glass bottles, but now also in Tetra Pak or as a concentrate for home use. In Germany too, more and more coffee shops are selling cold coffee, mostly in glass bottles. A bottle costs around three euros and upwards. If you want it cheaper, you can simply test Cold Brew Coffee at home.

Make your own cold brew coffee

You don’t need a complex machine or anything similar for this – a simple French press is enough.

For a pot (about 0.25 liters) you need about 40 grams of ground coffee. Of course, not the cheapest brand from the supermarket should be used, but aromatic high-quality coffee. Pour the coffee into the pot, pour in 250 milliliters of water, and let it steep overnight. Press the stamp down in the morning and the cold brew coffee can be enjoyed.

Connoisseurs drink it purely because of the aromas. If you want, you can also mix the coffee with cold milk. If you want to learn more about special coffee trends, also read our Bulletproof Coffee article!

This is probably the most delicate temptation since ice cream has existed: wafer-thin ice cream rolls! The trend is spilling over from Thailand to more and more countries, and so in many German cities, delicate rolls are now being formed with a sharp spatula and served in an ice cream sundae.

Delicate rolls as an ice cream trend

Foodies no longer order their ice cream in the form of large balls, but rather as wafer-thin rolls: Ice Cream Rolls are the name of the latest food trend that is spilling over from Thailand and making ice cream lovers happy. Best of all: the ice rolls are prepared individually for the customer on-site – this guarantees freshness and there is something for every taste!

This is how ice cream rolls are made

The basis of the ice cream rolls is the crème anglaise – a cream made of egg yolk, sugar, and milk. This mass is placed on a metal plate at a temperature of around minus 20 degrees and refined with the customer’s favorite ingredients. This can be fruit, chocolate, or biscuits, for example, which are chopped up directly on the plate, mixed with the cream, and then spread thinly on top.

Healthy ice cream enjoyment?

Depending on the method of preparation, there are around 110 kilocalories in 100 grams of crème anglaise alone – plus the calories from the toppings you have chosen. For comparison: 100 grams of vanilla ice cream have about 200 calories.

Thus, none of the ice cream variants are really a figure-conscious choice. With the right toppings such as berries or nuts, however, some “empty” calories can be saved on the ice cream rolls. But the same applies here: Sweet sins are of course allowed from time to time and can then be enjoyed all the more!

If you combine Mexican burritos and Japanese sushi, you get the latest food trend that has reached us from overseas: susharitos! Here you can find out what is behind the food trend and how you can imitate it at home.

No sushi, no burrito—susharito!

They taste light and fresh like sushi and are easy to eat like burritos: susharitos! The delicious burrito-sushi hybrids have their origin in San Francisco. The delicious sushi wraps have been there since 2010. After the sushi burgers, they are finally conquering Germany’s street food markets and restaurants.

Nori sheets are filled with rice and fresh ingredients. There are no limits to creativity here: fish, meat, tofu, fresh vegetables, herbs, or salad – everything can be rolled into the susharito.

That’s how healthy susharitos are

Sushiritos prove that fast food can be healthy too! The delicious sushi wraps contain everything you need for a balanced and healthy diet: carbohydrates, proteins, fiber, unsaturated fatty acids, fiber, minerals, and numerous vitamins. The nori seaweed sheets, which are filled with all sorts of healthy ingredients, are real health makers! In addition to vitamin A, B1, B2, niacin, and vitamin C, they contain iodine and protein.

From now on, susharitos can be on the menu more often! Since susharitos are easy to eat without cutlery, you can also take them to work or enjoy them on the go.

On the next page, we will show you how you can imitate the food trend at home.

Make sushi to yourself

Choose your favorites from the building blocks below and build your personal favorite Sushirito!

The building blocks

  1.  base. Nori Sheets, Sushi Rice
  2. Protein. Salmon, tuna, tofu, crab, shrimp, boiled egg
  3. Vegetables. Carrot, cucumber, bean, avocado, bell pepper, cooked sweet potato, mango, apple, arugula, radish, red cabbage, lettuce, coriander, mint
  4. Toppings. Sesame, wasabi, soy sauce, peanut sauce, lime juice, pickled ginger, chopped peanuts

Preparation:

  1. First cook the sushi rice.
  2. Then cut the vegetables, lettuce, and herbs into strips.
  3. Place a sheet of nori on a cutting board. If you have a bamboo mat handy, place it under the nori sheet. The mat makes it easier to roll up the susharito later. Cover the nori sheet with rice. The top and bottom edges should be left free, otherwise, the roll will not hold together later.
  4. Spread the desired protein component, vegetables, and toppings on the rice.
  5. Now use the mat to shape everything into a thick roll.

Now nothing stands in the way of enjoyment – enjoy your personal susharito creation!

Traditional candles are increasingly taking on new forms: faces, bodies, cubes. But you can also pour the unusual candles yourself. We explain how to do it.

1.1 Material selection: Everything at a glance

When choosing your materials, there are a few things you should keep in mind. For example, when choosing the wax, you can choose between waxes of different origins. That’s what we’re going to talk about in more detail in the next paragraph. In general, to cast wax you need:
for the heat source: a medium saucepan and container or bowl for a double boiler
Bees, paraffin or stearin wax (like pallets?)
or like wax residues from home
as you like: wax color and/or glitter
Perfumes or oils for scented candles
a mold for casting: a jam jar, a toilet paper roll, or a pre-made mold
Wicks and wooden sticks (depending on the mold)
If you have taken care of all this, you will not be missing anything to pour candles. Now we will show you what you should pay attention to when choosing wax and shape.

1.2 Material selection: The right wax

The most popular waxes for pouring candles are paraffin, stearin or beeswax. As a by-product of petroleum, paraffin wax is the most commonly used in Germany. However, paraffin (wax) is often criticized. Not least because of their chemical composition. The EU Chemicals Regulation (also known as the CLP Regulation) is a global system for the classification and labeling of chemicals. She classifies paraffin as harmless to humans, but emphasizes that it also depends on the use and the further composition. However, this does not necessarily mean the paraffin in candles. Because this is also found in cosmetics and medicine, for example. Unfortunately, it is not uncommon for remains of this to end up in nature. Because paraffin is environmentally friendly, petroleum, definitely not.

Stearin wax has a higher melting point than paraffin, so it’s not quite as sensitive to heat and has a longer shelf life. Stearin wax is less polluting, but more expensive. It is obtained from vegetable or animal fats, mostly palm oil or coconut fat. Incidentally, both paraffin and stearin waxes are colorless.

A wax of natural but animal origin is beeswax. Therefore the candles are not vegan. On the other hand, organic beeswax candles are probably the most environmentally friendly alternative. But it is also the most expensive raw material to produce. In addition, beeswax already comes with a golden-yellowish color. As you can see, unfortunately none of the waxes are really sustainable or vegan, which is why you can first look around for wax residues at home. You can use both colored and colorless candle residues. Watering works just as well and you usually already have them at home.

1.3 Material selection: the right shape

Depending on the purpose of the candle, you can use different shapes. You can easily use toilet paper rolls from home to mold your candles and then easily remove them from the roll. Aluminum foil, which you can shape like a bowl, is also suitable for smaller shapes.

If you want to pour scented candles or colorful candles, jam jars are good for this. You can wrap them up with a lid and give them away as gifts. You can also observe the color gradient for candles made of colored wax, and the glass alternative is always sustainable.

If you would like to dare to make large, unusual candles, you can probably still get some shapes online. These range from bodies and faces to a wide variety of shapes. It’s worth browsing. Since the process of making the candles is always the same, you can first try your hand at the toilet roll and then individual shapes.

2.1 Preparation: heat source

There are different ways to heat wax. We will introduce you to the safest and cleanest option. This means that candle casting can also be carried out with small children without any problems, under the supervision of adults.

In order to melt the wax of your candles, you need to set up a water bath. To do this, take a medium-sized saucepan and add a few glasses of water to a heatproof container to melt the wax, or a few more to melt in a bowl. You put your bowl on the pot with water, you put the container in it so that part of it lies or stands in the water.

Once this is done, you can add your wax to the bowl or container and begin melting it. Occasional stirring should be enough to get your wax runny. One benefit of heating your wax in a water bath is that you can easily keep it warm or reheat it.

2.2 Preparation: Prepare the wick

Without a good wick, there is no long-lasting candle. But that is not an obstacle either. We will show you how you can make a wick quickly and easily at home and how to properly prepare this or a store-bought one for watering.

Make a wick yourself: You can easily make a candle wick yourself. For this you need yarn made of pure and thick cotton (this is important!). Once you have chosen your shape, you can first adjust and cut your yarn to length. Then you take your cut yarn and dip it completely into your wax except for a few finger widths (leave the top free) and wait for the first pass until it is well soaked. Then let your wick cool down briefly before repeating the process three to four times. Then let your wick cool down before you use it. Finished!

Prepare a store-bought or homemade wick: You can attach your wicks, whether you have made them yourself or bought them, to one side of the wooden stick and place this over the opening of your mould. This way your wick won’t slip or fall into the wax when pouring and you can easily pour without worrying about your wick slipping.

3.1 Casting: procedure

Now let’s get to the watering! Once the wax has melted, you can color it, add essential oils or glitter. Note that the wax is initially clear and later white. Therefore, you should use moderation with the intensity of your color. You can also place multiple containers in a water bath to pour different color gradients. To do this, you wait after each layer of paint until it cools down. Now it’s about how your candle should ultimately look like.

For smooth candles, the wax should be hot and very runny. This creates a smooth candle shape when pouring, just like you know from the drugstore. To pour matte candles, you should wait a while after heating your wax until it has cooled down a bit, but of course it is still liquid enough. This creates the matte effect of your candle.

Now let’s get to the fun part. You can simply let your poured candles cool down in the molds. Ideally, you’ll give them a day to really solidify.

3.2 Creative casting

We would now like to briefly introduce you to a special way of designing your candle despite its original shape. So you can pour candles with a great optical effect without any effort.

Ideally, use a vessel that has the familiar candle shape. You can also use a toilet paper roll, but you can only see your result afterwards. Therefore, jam jars are ideal for observing the pouring. Then color wax in two containers with at least two colors or leave one colorless or white. Then lay the wick together with the wooden stick over your glass.

Tilt your glass and pour the first layer of paint into the glass. Pour until the wax takes the shape of a pyramid or triangle. Let the layer cool and then take the container of the other color. Now turn your glass in the other direction and pour out the free part. You can repeat this alternately before you recognize the triangle pattern and your glass is filled.

4. Your candle as a decoration or gift

After a few runs, you should be able to make candles fairly easily, which is why you can make candles for yourself as well as for family and friends.

Beautifully cast candles in the form of bodies are increasingly found as decoration in our living rooms. Colorless or single-colored candles are simple and give your living room table style. Colorful candles are perfect as a decoration in the garden for long summer nights. Even poured scented candles give your room a Christmassy scent in winter.

Therefore, you can also give your candles nicely wrapped as homemade gifts. Individually selected shapes can be used for family and friends in advance. This gives your gift a personal touch. As you can see, the production is not too difficult and time-consuming, the result is all the more beautiful. Have fun!

“Food in the nude”: With this new trend, a supermarket chain in New Zealand offers all its fruit and vegetables without plastic packaging. The reactions are amazing.

New World leads by example

Plastic bags have been gone from most supermarkets in New Zealand for some time. The government also approved an exit for all retailers from July 1, 2019. The supermarket chain “New World”, the New Zealand counterpart to EDEKA, even goes one step further.

Under the title “Food in the nude” (in English: “Naked food”), New World has declared war on unnecessary plastic packaging: In the branches, almost all fruit and vegetables are offered unpackaged. This project is another step toward Zero Waste.

Food in the nude is also financially worthwhile

Nigel Bond, the owner of the New World store in Bishopdale, Christchurch, was initially unsure whether the move away from plastic could have a negative impact on sales. But on the contrary: the project inspires customers and sales have even increased. “After we introduced the concept, we found that spring onion sales had increased by 300 percent. We saw a similar increase in silver beets and radishes,” reports Nigel Bond.

Eight of the nine supermarket branches located on New Zealand’s South Island have also implemented the project.

New World is also testing other alternatives

Some New World stores offer the option to bring your own cans to reduce plastic waste. Butchery products and seafood can thus be packed and transported in their own cans. However, this option is currently only available for these foods, because the preparation and cooking of these products enable hygiene standards and food safety to be maintained. With other foods, however, you have to look at this more critically. According to Brendon Jones, the owner and operator of a New World branch in Howick, this action is progressing slowly.

In addition, other alternatives to conventional packaging are being tested. Plastic bags are being replaced by paper bags and fiber-based food containers are being made. In this way, products can be sold without plastic.

New World proves that there are good alternatives to traditional plastic packaging. At the same time, they show that a rethink is not only important for consumers, but also for suppliers and supermarket operators in order to really change something.
