Vegetable okroshka

  1. Boil and cool beets, potatoes and carrots. Cut carrots, cucumbers, beets into small cubes, chop potatoes on a grater. Chop the green onion feathers and grind with salt until soft and juiced.
  2. Separate the yolks from boiled eggs and grind with mustard, finely chop the whites. Stir onions, potatoes, sour cream and yolks, add vegetables, cucumbers, sugar, pour cold kvass, let stand for a while.
  3. Pour vegetable okroshka into plates, add finely chopped dill to each. Instead of carrots and beets, you can use turnips and cauliflower for cooking.
