This unusual Spanish soup is called "white gazpacho" because it uses raw almonds instead of tomatoes. As a complement to the dish, grapes or pieces of melon are served, which set off its delicate taste.

  1. Dip the almonds in boiling water for 1 minute, then pour over them with cold water and peel them.
  2. Peel and chop the garlic. Put nuts, garlic, oil and vinegar in a blender bowl, beat everything into a homogeneous smooth mass.
  3. Dilute the soup with a little cold water, salt to taste and refrigerate for 15 minutes.
  4. Sprinkle with halved grapes before serving if desired.
