  1. Cook the rice in a liter of water until tender (about 45 minutes). Drain off any remaining water and set aside.
  2. Heat oil in a saucepan, lightly fry chopped onions, celery and carrots. Then add thyme and flour, simmer, stirring occasionally, for another 2-3 minutes. Pour in broth and bring to a boil.
  3. Add chopped chicken, mushrooms, salt and pepper and simmer for 10 minutes. Then add rice and cream, let the soup boil again and heat for 5 minutes. Turn off, put the parsley and let it brew a little.
