This is not just broth in the usual sense of the word, it is more Scottish broth or French "pot-au-feu", in which the broth is cooked first, and then the meat and vegetables are added.

  1. Peel the bacon and place in a large pot of water to cover. Bring to a boil and remove the resulting foam. Add pearl barley and lentils, bring to a boil and simmer for about 25 minutes. Add onions, carrots, parsnips, flavored peppers, thyme, and a sprig of parsley. Bring to a boil again, reduce the temperature and simmer for half an hour.
  2. Add potatoes and cabbage, bring to a boil again, and boil again until vegetables are tender. The cereals and lentils will have softened by this time, and some of the bacon should be ready. Otherwise, simmer for a little longer. Add the chopped leeks and chopped parsley five minutes before the broth is ready. Other meats can also be used instead of bacon.
