This quirky soup is filled with all the ingredients of a traditional Mexican taco. There are ground beef, three types of canned beans - kidney, pinto and black beans, canned corn, tomatoes, chili peppers and spices. Minced meat is cooked in minutes, so when all the other ingredients in the pot are warmed up, the soup is ready. Serve complementing each serving with the most popular taco toppings: sour cream, grated cheese and pico de gallo salsa made from chopped tomatoes, chili and herbs. Eat tortilla chip soup if desired.

  1. Heat olive oil in a large cauldron or heavy-bottomed saucepan over medium heat. Add white onions and sauté, stirring occasionally, until aromatic and soft, about 2 minutes. Add the ground beef and cook, stirring occasionally, to break it into small crumbs, 8-10 minutes. Stir in taco seasoning and ranch sauce.
  2. Add tomatoes, beans, corn and 1 tsp. salt. Fill one of the bean jars with water and transfer to a saucepan. Bring to a boil, then reduce heat to medium and simmer on a low boil, stirring occasionally, until the beans are warm, about 10 minutes. Serve the soup in bowls, sprinkled with green onions, cheddar, drizzled with sour cream and topped with pico de gallo.
