A slow cooker will help out when you need to quickly cook dry bean soup. Mix it with fried onion and hot peppers, sprinkle with spices, fill with broth and boil in pressure cooker mode. When the soup is ready, whisk it with a blender and serve, garnish each serving with fresh onions, cilantro, tomatoes, lime wedges, sour cream and avocado. The result is a delicious, warming and satisfying Mexican-style soup.

  1. Set the multicooker to the frying mode. Add fat or butter and melt. Add garlic, onion, bell peppers and jalapenos. Cook until vegetables are tender, about 3 minutes. Sprinkle with chili powder, cumin and salt. Stir and cook for about a minute. Add the beans and pour over the broth. Place the lid on and close the valve. Set the pressure cooker to 50 minutes.
  2. Once the cooker cycle is complete, let the pressure drop naturally for 10 minutes and then release the remaining steam through the valve. Remove the lid and add lime juice. Use an immersion blender to grind the soup until it is almost smooth. Taste and add salt if necessary. If the soup is too thick, add a little broth to dilute it. Pour the soup into bowls and sprinkle with red onions, cilantro, tomatoes, avocado, drizzle with sour cream and garnish with lime slices.
