Chicken broth soup with vegetables and grapefruit juice

Heat oil in a saucepan with a thick bottom, add finely chopped onion. Simmer for 3 minutes. Add finely chopped carrots and celery and cook for a couple of minutes. Pour in hot broth, bring to a boil, cook for 5-10 minutes.
Pour a couple of soup ladles into the bowl of the food processor and add crackers. Grind. Transfer the mixture to the soup. In a food processor, beat the yolks, grapefruit juice and wine.
Put the soup on low heat and gradually pour the egg mixture into it, stirring occasionally. Do not let the soup boil. The soup should thicken. Remove from heat.
