Chicken soup with eggs

  1. Pour chicken broth into a saucepan, add ginger, green onions and bring to a boil. Cook over low heat with the lid on for 20 minutes. Remove from heat, remove ginger and green onions, and strain into a large bowl. Transfer the broth back to the pot and add the sake.
  2. Meanwhile, stir in a bowl the chicken with sesame oil, 1 tablespoon cornstarch, 1/2 teaspoon salt, and 1/2 teaspoon pepper. Dissolve the remaining 3 tablespoons of cornstarch in 1/4 cup cold water. Add cornstarch to broth and cook, stirring occasionally, until thickened, about 4 minutes.
  3. Add chicken and cook for 1-2 minutes. Pour in the beaten eggs in a thin stream, stirring constantly, then add the watercress.
