Chili con carne with beer

  1. To make the ground beef: Saute the bacon over medium heat in a large deep skillet or heavy-bottomed saucepan, 6-8 minutes on each side. Transfer the bacon to a paper towel and chill, then chop into a separate bowl. Drain the bacon fat from the pan (leave 1 tablespoon). Increase the heat and add the ground beef to the pan, fry, kneading with a wooden spatula, for 8 minutes. Transfer the fried minced meat to a dish.
  2. Prepare vegetables: Heat the remaining spoonful of bacon fat in a skillet. Add onions, bell peppers and fry at medium-high heat, stirring occasionally, for about 5 minutes. Add garlic and 1 tsp. salt, cook for 2 min. Add chili powder, cumin, paprika, oregano, tomato paste and cook, stirring occasionally, for about 6 minutes (if the mixture starts to burn, add a little water). Pour in beer and boil vegetables for another 3 minutes.
  3. Add minced meat, cocoa powder, tomatoes with liquid, broth and beans to the vegetables, bring to a boil. Simmer over low heat, stirring occasionally, for about 1 hour 30 minutes. Add hot sauce to the chili con carne and season with salt to taste. If the chili is thick, add more broth. Divide the cooked Chili con carne with beer into portions and sprinkle with bacon, cheese and green onions on top. Serve with sour cream.
