Cold creamy cucumber soup

This soup does not require any heat treatment and is cooked in a blender. The creamy consistency is provided by the smooth yoghurt, while the honey imparts a sweet flavor.

  1. Peel the cucumbers and remove the seeds. Rub on a grater with large holes, you should get 3 tbsp. pulp. In a food processor, combine shredded cucumbers, yogurt, garlic, honey, and lemon juice. Chop the dill and add to the food processor. Process the mixture until smooth, creamy, pouring in water slowly. Season with salt and pepper and stir again. Pour the cream soup into the tureen and refrigerate until serving. If desired, you can sprinkle with chopped walnuts like a Bulgarian soup tarator.
