Aromatic fruits can be used to make more than just baking stuffing or preserves. Turn them into an original refreshing dish with light notes of vanilla and ginger.

  1. Peel and cut the pears into small cubes. Peel and grate the ginger.
  2. In a saucepan, combine the pears with ginger and apple juice, bring the mixture to a boil and simmer over low heat, covered for 30 minutes.
  3. When the pears are soft, remove the pan from the heat and cool them completely.
  4. Whisk the cooled pears with a blender until smooth, add yogurt, sugar and vanilla extract, mix well.
  5. Pour the soup into bowls, sprinkle with chopped mint and garnish with whipped cream if desired.
