This homemade creamy carrot soup can be taken away in a plastic container and reheated for weekday lunch or prepared for weekend dinner. The sweet taste of carrots with the addition of cheese and milk will delight all family members.

  1. In a large saucepan, combine chicken stock, carrots, onions, parsley, cover and bring to a boil over medium-high heat. Then reduce heat and simmer for about 10 minutes, until carrots are tender. Heat milk in a microwave oven at medium high power until steam forms. Set aside.
  2. In a small bowl, melt the butter in the microwave on medium-high power, then stir in the flour, salt, sugar and pepper. Gradually pouring in the warmed milk, beat until smooth. Add the milk mixture to the vegetables and cook over medium heat, stirring frequently, until the soup thickens. Remove the saucepan from the stove and stir in the cheese. Pour the soup into bowls and serve.
