A rich and silky creamy soup made with spinach, onions and spices in milk and thickened with flour. To make the soup taste richer, spinach is pre-fried in olive oil, and onions are fried in butter. After all the ingredients are combined in one saucepan and the soup has thickened, you can serve it sprinkled with fresh herbs.

  1. Heat olive oil in a large skillet over medium-high heat. Add spinach and garlic and sauté, stirring constantly, until spinach wilts, 2-3 minutes. Add the mixture to a blender or food processor, pour in 1/4 tbsp. hot water and chop to a puree consistency.
  2. Melt the butter in a large soup casserole over medium heat. Add the onion and cook until softened, about 5 minutes. Sprinkle with flour and stir to distribute the ingredients evenly. Cook for about 2 minutes, then add milk, stirring occasionally. Add 2 tsp. salt, cayenne pepper and some freshly ground black pepper. Cook, stirring constantly, until the soup thickens slightly, about 5 minutes.
  3. Add chopped spinach to the soup and cook until thickened, another 3-5 minutes. If the soup is too thick, add a little more warm water or milk. Taste and season with salt or pepper if necessary. Pour the soup into bowls and sprinkle each serving with parsley and / or chives.
