Creamy potato and leek soup

  1. Make deep cuts along each leek stalk and rinse under cold running water. Cut off the white parts of the stems and slice them thinly. Choose only the most delicate leaves from the green parts.
  2. Cut the potatoes into cubes.
  3. Place the potatoes and leek in a saucepan, add 2 liters of cold water, bring to a boil, season with salt, reduce heat, cover and cook for about 30 minutes.
  4. After that, it remains to beat the soup in mashed potatoes with a blender. Add salt and pepper and reduce heat under saucepan to low.
  5. Now thinly slice the green leeks, place them in a saucepan and wait 5 minutes.
  6. Pour the finished soup into bowls, add a spoonful of sour cream or cream.
