This soup is quick and easy to prepare. The main thing is to find tortellini in the store, that is, pasta with a filling, similar to our dumplings.

  1. If using fresh tomatoes, prepare them: pour over boiling water, remove the skin, cut into pieces and simmer in a skillet under the lid for a few minutes.
  2. Heat the oil in a saucepan and fry the finely chopped onion for 5 minutes. Add garlic, paprika, salt and pepper and saute for 1 minute until a pleasant aroma appears.
  3. Add the tomatoes (chopped, canned or stewed), pour in the broth, add the basil, oregano and bay leaf and bring to a boil.
  4. Reduce heat, add tortellini and simmer for the amount indicated on the package (usually 7-9 minutes). Add spinach, simmer for a few more minutes and serve immediately, sprinkled with fresh herbs and cheese.
